Anyone who really knows me, knows I love to be creative in the kitchen. I'm not big on using recipes, and prefer to experiment with new combinations. Some turn out better than others. Tonight I had a successful creation. How do I know? The kids all had seconds!
Background: Last year, I started making thin crust pizzas with Trader Joe's Flat Bread. I've enjoyed making combos with BBQ sauce, or Alfredo sauce with chicken. Tonight, I used my new basil plant for inspiration. Trader Joe's has a huge basil plant for sale right now for only $3, that's cheaper than a cut bunch of basil!
TOMATO, BASIL, GARBANZO, MOZZARELLA FLAT BREAD PIZZA
2 flat bread pieces
1 cup Alfredo sauce
2 cups mozzarella cheese, shredded
2 Roma tomatoes
10 fresh basil leaves, chopped
1 can garbanzo beans, drain & rinse
Heat oven @ 375 degrees. Line jelly roll pan with foil, and oil lightly. Set the flat bread pieces side-by-side in the pan. Cut tomatoes into large bite-size pieces. Brush Alfredo sauce to cover bread, sprinkle with basil, tomatoes, and garbanzo beans. Cover with cheese. Season lightly with salt & pepper. Bake for 15 minutes, until cheese starts to bubble. Remove from oven, slice with pizza cutter, & let cool 5 minutes before serving.
