BANANA PANCAKES

Our Kid Rating (0-10): 10
Serves: 4

Whisk w/fork in bowl:
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt

Slowly add to dry mix, and only lightly mix batter so it's still lumpy:
1 large egg (lightly beaten)
1 cup milk
2 tablespoons butter (soft)

Heat skillet at medium. Slice 2 bananas into 1/4" rounds. Lightly butter skillet & place 3-5 banana slices in the skillet. Cover each banana slice with one tablespoon of batter. Flip over when bubbles form on top. I got 26 small pancakes. Fry up the remaining banana slices and serve on the plates.

TIP: Keep pancakes warm by sitting them in the oven at 175 degrees, until everyone is ready to eat. (You know that means please wait to eat with Mom!)

I made this yummy breakfast today, and the kids went wild! I got this recipe from MS; the children all screamed, "Thank you Martha Stewart!"

Half of our family is sick with a summer flu/cold thing, so I'm trying to make super solid meals to help us get some strength. :)
