Rocky Road Fudge

This is our current favorite treat to make, & it's one the kids can even do on their own! I've mostly been into this recipe, because I don't have to turn on the oven to make it--perfect for summertime.

ROCKY ROAD FUDGE
3-1/2 cups mini marshmallows
2 cups coarsely chopped walnuts
2 cups semisweet chocolate chips
1 can sweetened condensed milk (14oz)
1 tsp. vanilla extract

Line 8-inch square pan with foil, & coat lightly with oil. Set aside 1/2 cup nuts & 1/2 cup marshmallows. Melt the chocolate chips & condensed milk in microwave on high for 1 minute. Stir until chocolate is melted. Stir in vanilla, 3 cups marshmallows, & 1-1/2 cups of the nuts into the chocolate mixture. Scoop into prepared pan, spread out evenly, & smooth the top. Sprinkle fudge with reserved marshmallows and nuts, gently pressing them into the surface. Cover with plastic wrap & refrigerate at least 30 minutes before serving.

TIPS: I prefer to use pecans and/or almonds. Also, I like to switch out half the semisweet chocolate chips for milk chocolate chips.
